Suparen® - PROTEASE
Suparen® is a liquid microbial coagulant (endopeptidase) derived from a special strain of the fungus
Cryphonectria (Endothia) parasitica. It's characteristics are close to rennet and has a high thermal conductivity. Especially suitable for Swiss-type cheeses such as Emmenthal or Masdam and hard cheeses - Parmesan or Pecorino.
